30 Minute Easy Chicken Ramen Soup

You know what we're talking about, right? Who didn’t love that affordable (10 for $1.00!) packaged and oh-so-sodium laden ramen soup? We sure did. But you know what? We’ve grown up and so have our taste buds. We are also a lot more conscious of what we are putting in our bodies, not to mention the bodies of the loved ones we are feeding around the dinner table. For this reason, we am making this Easy Chicken Ramen recipe using Spectrum® brand Organic Sesame Oil to take our childhood ramen soup to new heights of deliciousness.

For this Easy Chicken Ramen recipe we’ll be using the same dried ramen noodles you know and love, but losing that nasty sodium-filled flavor packet in exchange for a few “homemade” flavor bombs. A favorite new discovery of ours is the Organic Sesame Oil by Spectrum.®.

How Do You Make Ramen Soup?

This Chicken Ramen Soup comes together really quickly. 30 minutes is all it takes to get this flavorful 8 ingredient dish onto the table, which makes it a real winner in our book. For this recipe, we'll be heating some broth and then adding a ton of flavor, finally we’ll finish it by adding the cooked chicken and perfect soft boiled “ramen-egg.”

Ramen is one of those dishes that is hard to recreate authentically at home if you don’t have a lot of time. Most restaurant recipes take time to develop an intense flavor profile that is hard to compete with. Luckily, we’ve applied a few tricks to this Easy Chicken Ramen Soup recipe that make our homemade version just as craveable as a favorite ramen you might have experienced abroad.

Easy Chicken Ramen Soup

  • 1 tbsp Organic Sesame Oil
  • 4 garlic cloves, minced
  • 2 tbsp ginger, minced
  • 6 cups chicken stock
  • 3 tbsp soy sauce
  • 1/2 bunch green onions, chopped
  • 3.2 oz package shiitake mushrooms, sliced
  • 1 cup cooked chicken, shredded or sliced
  • 1/2 tsp salt
  • 3 packs ramen noodles (flavor packet discarded)
  • 2 6 minute eggs
  • sesame seeds

Scallion Chili Sesame Oil


  1. In a small bowl, combine the 3 ingredients for the Scallion, Chili, Sesame oil. Set aside.
  2. Heat 1 tablespoon Organic Sesame Oil in a medium sized soup pot. Add the garlic and ginger and sauté until fragrant.
  3. Add the chicken stock, soy sauce, green onions, mushrooms, chicken and salt and bring to a boil. Add the 3 packages of ramen (noodles only, discard the flavor packet). Boil for 2 minutes until noodles are soft. Remove from heat.
  4. Sprinkle the sesame seeds over the soup and place the soft boiled (6 minute) egg in the bowl. Serve with the Scallion, chili, sesame oil.

    Could I NOT add the chicken slices and eggs? I was just wondering if I could make this a bit faster and since I am not a fan of non veg I thought the chicken stock would be enough....

    This is SO GOOD and SUPER EASY!!! I was feeling too intimidated to make Ramen but have always wanted to. The ingredients are easy to find (nothing you have to order or go to a specialty store for). I first tried this over the holidays for my husband and I…and now it has become a bi-weekly staple! I’ve even started to modify and add or try more veggies in it like carrots, peppers, etc. DO NOT SLEEP on this Ramen recipe, it’s AMAZING!
