You know almond milk—maybe you order your latte with almond milk, or you put it on your cereal when you’re trying to take a break from dairy. But what is almond milk, really? As you’ll see when we dig deeper into this super easy almond milk recipe, almond milk is simply all the creamy goodness that you can squeeze out of an almond. It’s a great non-dairy alternative to milk—almond milk is perfect for those who are following a vegan diet, or are simply lactose intolerant. If you’d like it to be slightly sweet, you can add dates to the mix. And yeah, you can buy it at the store, but the very best almond milk is always going to be the one you make fresh at home! And it’s a lot easier to make almond milk than you might imagine. We’ll walk you through it!

Almond Milk Ingredients

When we’re so used to buying something at the store, it can be hard to wrap our heads around making something at home, but honestly homemade almond milk is so, so simple. You really don’t need any special or weird ingredients, and if you’re making unsweetened almond milk then the ingredients are even simpler. To make almond milk, you’ll need just two ingredients:

  • Almonds

  • Sea salt

If you want to make the almond milk more exciting or a bit sweeter, you can add:

  • Cinnamon

  • Vanilla

  • Dates

How To Make Almond Milk

You will need a good blender and a nut bag or a good, thin kitchen towel. Other than that, making almond milk could not be simpler. Once you’ve got the goods, you’ll be floored by how basic this is. Here’s how to make almond milk from scratch at home:

  1. Soak the almonds! Overnight is best.

  2. Blend the almonds! With fresh water (not the water they soaked in), the sea salt and any other optional add-ins, like vanilla, cinnamon or dates.

  3. Squeeze the almonds! You could also call this “milking the almonds” but that might get weird.

  4. Drink your fabulous almond milk! Pat yourself on the back—you just made almond milk! Go tell everyone how great you are.

Is Almond Milk Healthy?

These kinds of questions are always tricky, but overall, yeah! Almond milk is a pretty healthy thing to swap in for milk. Store bought almond milk can be more of a wild card, nutritionally, because some companies add stabilizers, preservatives and other funky or weird ingredients to the mix. Homemade almond milk, however, is definitely good for you because the ingredients are whole and simple—just almonds, water and a little salt. While it doesn’t deliver as many grams of protein as cow’s milk, almond milk is very low-calorie and low-carb, and much lower in fat than cow’s milk. Overall, it’s a lot easier on your cardiovascular system than cow’s milk, and that can definitely be a great thing for your health.

Can You Freeze Almond Milk?

Yes, you can freeze almond milk if you really want to! There’s nothing dangerous about freezing homemade almond milk. However the texture and color will change, so it’s ideal to make it fresh when you want to drink it or use it.

Ingredients

  • 1 cup raw almonds (Soaked in a bowl of cool water for 8-12 hours, overnight works best)
  • 4 cups filtered water (if you’d like it a little thinner you can add 5 cups water)
  • 1/4 tsp sea salt
  • 2-4 whole, pitted dates, optional (depending on the size of the date and how sweet you want the almond milk to be)
  • 1 tsp vanilla extract, optional
  • 1/2 tsp cinnamon, optional

Method

  1. Drain and rinse your soaked almonds, discarding the soaking water. Add them to the base of a high-speed blender along with the fresh water, salt, dates, vanilla and cinnamon if using. Blend on high until creamy, nearly smooth and foamy, at least 1-2 minutes.

  2. Using a nut bag or thin (flour sack style) kitchen towel draped over a large bowl, strain the almond milk into a large bowl. If using the towel simply gather the fabric around the pulp and gently squeeze (wring it as you go) until all of the liquid is extracted.

  3. Transfer the milk to a jar with a tight-fitting lid and refrigerate. Will keep for up to 4 days. Shake well before drinking because the cinnamon will sink to the bottom and the milk tends to separate.

    Any ideas on how to use the leftover pulp? I’d love to make my own healthier version of almond milk and not be wasteful!

    We've never used our pulp but we've seen people use it in energy bites and brownie recipes before. You could try googling some ideas!
